Located in a brick building on the corner of Charleville Boulevard and Beverly Boulevard in Beverly Hills, Paulette is so far the one and only macaron-specialized shop in Los Angeles.  I have wondered many times if that could ever be possible, and after much research, it seems to me that it really is the only one in town! The decor of the shop has won awards for best designs, and it's understandable- it's very innovative but simple and playful.

There are more than a dozen kinds of macarons made by chef Christophe Michalak every day.  Each has its own personality, each made with perfection, and each presented very well.  You can easily end up buying them all because how delicious they look, and $1.50 each for the price!


OVERALL:
  • 1½" ~ 2" in diameter
  • smooth matte surface
  • nice soft crunch outside
  • lots of filling inside
  • balanced ratio of outer shell to filling

DETAILS:
RASPBERRY
 
Sweet red crunchy outer.  Marbled raspberry ganache and raspberry jam inside with tinyl bits of raspberry seeds.

ROSE
Lovely salmon-pink outer with an accented brush mark. Lightly crunch, lightly chewy, and inside is a white silky smooth rose water flavor. Very aromatic and creamy.

BLACKBERRY
Light creamy purple shell, with marbled white and dark purple blackberry jam.  The filling was very flavorful and aromatic.

LYCHEE
Exterior is light pink with a perfect consistency in texture.  The filling is creamy white lychee, and can really taste the fruit, especially the after taste.


EARL GREY
Light moss green shell with an accented brush stroke on one side.  Nice harmony of outer shell and the very smooth and tasty earl grey buttercream.

COCONUT
Top shell has toasted coconut bits sprinkled on, and is lightly toasted.  The inside filling is coconut juice flavored, not cream.  So it a very fruity, refreshing, and crunchy creamy goodness.

MY FAVORITES:
Rose and Blackberry.

CONCLUSION:
When you specialize in something, you really set yourself apart from those who may be doing a variety of things.  Each of Paulette's macarons looks, smells, and tastes a lot better than many macarons in town, and reminds me why I fell in love with macarons in the first place.  The difference is in the package, the execution, the assemblage, the freshness of ingredients, and mostly the quality of the filling.  The difference is in the filling!
